  1. Slice squash lengthwise in 1/2" thick pieces and set aside.
  2. Mix 1/2 cup of olive oil, pepper & garlic salt and baste squash and grill in ribbed pan until tender.
  3. Cut halibut into about 1" to 1 1/2" pieces.
  4. Heat 2 tbsp olive oil in pan and cook halibut with lemon juice.
  5. Heat remaining 2 tbsp. olive oil in another pan and sauté green beans & mushrooms. Season to taste with salt & pepper..
  6. Place squash on plate and top with halibut, green beans, & mushrooms..
  7. Sprinkle lemon zest on top for extra pop.

This is a simple recipe for grilled chayote squash topped with olive oil and mozzarella cheese. Heat grill and transfer squash to skewers. When hot, add squash and cook until grill marks form.
