This quinoa stir-fry is my take on the dish my parents used to serve when we were kids, but I've jazzed it up just a little bit. I've used a spicy ginger-soy sauce, baked tofu squares, steamed broccoli, quinoa. A stir-fry quinoa bowl brimming with fresh veggies and tofu is a healthy replacement for the days you just can't kick the craving for takeout. - Cook quinoa according to package directions and set aside..

- Add a dash of olive oil to a frying pan and add the ginger, carrots and green beans..
- Leave for 5 minutes and add the mushrooms and red pepper. Add salt and pepper. Add the chopped almonds. Leave for 10minutes on low heat..
- When the carrots have softened add the quinoa. Cook for another 10 minutes and serve..
